Pancakes are a good thing


Mmmmmm, we have learned to loooove pancakes!!  :D
Would you believe it, our family hadn't really liked pancakes a whole lot up until this past year?!!!  Well, this year has taught us a LOT!  I had always thought we were pretty thankful.  I mean, I watched many families feed their children nothing but cold cereal every morning (even Walmart brands is more expensive than feeding your family pancakes made from scratch and/or old fashioned oatmeal, for example).  We've really never done that.  First of all, because Ellery has always believed in being healthy.  And he grew up on oatmeal and wanted us doing the same thing.  
Secondly, he always believed in how budget friendly oatmeal is.  Soooo, anyways.  What I had found with our family though, is that we had somehow veered more  towards WAFFLES than pancakes.  And though the expense isn't any different, the time IS!  And I'm big on "Time is money"!  So we made it a family tradition, beginning when the children were all real little, to have waffles every Saturday morning.  That was the ONLY TIME I had to do waffles.  
Well, then we'd have oatmeal every other morning.  And has been thus, for most of mine and Ellery's married life.  But then I found a couple years ago, that the children and I were getting pretty tired of OATS!  And I found myself slipping in things like more eggs, and sausage.  Then I would stretch those out, with GRITS :D  And I still love those too (just trailer cooking doesn't leave room to cook all that sort of items in one meal).  And in this past year, I found that out major tight times, we not allowing my usual 5 1/2 dozen eggs and a bulk size frozen package of sausage patties every 2 wks.  
So we have found, that we've grown to actually really like pancakes.  We have pancakes probably 2-4 times a week!!!  
 PANCAKES!!  And I use the recipe from Hillbilly Housewife :)
This is my FAVORITE griddle.  It's cast iron and sits over two gas flamed stovetop spots.  
YUM, look at that stack of pancakes!  This morning that I made this batch, I made SIX batches of my batter :0  Usually we make four, but I noticed the last time Megan or I made our regular batch, it just hasn't been quite 'cuttin it'.  Because I always like to have several more left on the plate for snacking later. 
Ha ha ha!  Here's our 'Walking Stomach' himself!!!  This boy can pack away some serious food!!  He's waiting for more ;)
